The barbera, dolcetto
and cortese grapes are the main
varieties grown in this area. The area looks small on the map, but
it is rich in differences in relation to the soil, the type of exposure
and the humidity. The revival of the timorasso, a white grape typical of these hills, shows how historical and cultural factors can influence the choice of varieties of vine, as well as their adaptability to local climatic conditions. The exact work that is done in the vineyards over the year aims to maintain the balance between quality and quantity of the resulting wine, and the methods used are the result of years of experiment and verification. |

We draw both on experience and on chemical analysis to select the best ways of treating the grapes, from the pressing to the bottling of the wine. Our methodology permits the use of bisulphates in very small quantities, and maintains the high quality of the wine even in difficult years.. Inevitably viticulture makes the producer an expert on the characteristics of his own particular land, perhaps more than any other activity. This encourages the development of an entire local culture, which can help city-dwellers as well understand our link with the soil. |

| Over the years we have increased the number of wines we bottle, ensuring that each of our wines has its own individual identity. In some cases the grapes themselves seem to ask to be made into their own sort of wine, when at harvest-time they reveal their particular strong and harmonious qualities. | |||

Among red wines we have excellent reserves of those made from the barbera grape. It is cultivated with a regard for the relationship between quantity and quality, and it demonstrates the strength and potential of this clayey soil. A moderate use of wooden barrels enriches the wine, without giving it too strong a taste - since it already has a very definite identity of its own. |

| In our cellars we also produce some remarkable white wines. We have found that our treatment of the grapes results in a delicate wine, which maintains its freshness and the typical aroma of this variety. | |||
