“ Make a filling with good meat, make your pasta and stuff the ravioli, cutting the stuffing very fine. Cook it for ten minutes and then add Barbera wine. Delicious!”

This is a typical Piedmontese wine, produced on the Tortonese hills from vineyards planted by the grandfathers of members of our co-operative. Our vineyards are fertilised with green manure and organic compost from our own animals, so in our farm the natural cycle is complete.

After the long labour of training the shoots of the vines, by mid September the thick bunches are full of violet-blue grapes, slightly slanting in shape. They are harvested and pressed in our own cellar and fermented naturally, in the old way, without additives of any sort.


The Barbera wine is garnet red in colour and has an intense winey aroma, with an authentic dry flavour. When aged, even if only for a few years, in oak barrels stored in a cool cellar, it has a full round and harmonious taste and reaches its full alcoholic content of between 13 and 14°.

This is a wine which should be served at room termperature to accompany cold meats, risottos, stuffed pasta, roasts, casseroles and stews.
